Being May27, when she marks her golden jubilee, she celebrates her 50years of existence, commercialization, survival, thrive and haste! Lemme tell you about this city: “THE CENTER OF EXCELLENCE” - LAGOS STATE! Welcome to Lagos where you don’t ask questions as a stranger, else you get a dumb response or totally misled. Welcome to Lagos where you need to hold your change in a public transport else... you’re on your own Welcome to Lagos where everybody is automatically a “Yoruba”. Everybody speaks Yoruba to everybody. Welcome to Lagos where everybody in a marccopolo bus is shouting “Owa Oooh”! Welcome to Lagos where passengers jump into a moving vehicle... I almost fell off the bus the first time I tried that. Welcome to Lagos where everybody is always on transit, with or without a destination. Welcome to Lagos where cars are more than the stars in the sky.  Welcome to Lagos where everybody in a wealthy home have cars; even the...

SUCKING

Image
When I first saw them sucking, so many thoughts ran through my mind; I couldn’t help but wonder what manner of food that could be. Although I was very young, I could still replay the look on their faces whenever they sucked. I’m referring to the Calabar neighbor we had, whose kitchen was marked by the unique redolence. The aroma alone does a public announcement that they are “Calabarians”. I dunno if you’ve tried this sucking before; but my first time was with Afang soup. Afang soup makes no sense without  “suckables” in it. Omg...I lack words to describe. By now you’re wondering what exactly this thing is ... “Mfi”, as it is locally called, is simply unshelled periwinkles. It is mostly eaten by  Cross Riverians and Akwa Ibomites; and it is characterized by so much sand content. You can tell when someone is cooking with “Mfi” during the washing... The process is so tedious. Enough water and enough patience are the basic tools for washing, as it makes so much nois...

THE CHRONICLES OF DAWA-DAWA

Image
(Smells like Sh*t) Dawa-Dawa(Locust beans), as it is locally called, was an indispensable seasoning in all the delicacies I prepared. At first I swore to never have anything to do with it because of the horrible smell that came along with it. "It is a fly lover. Chai the smell na blast!" But this same lady, my customer, convinced me, and also schooled me on the health benefits of Dawa-dawa: in her words, “google it na, Kopa. It is very very good”.  I tried it once, and the taste of the soup was unusually sumptuous. And that marked the Genesis of Dawa-dawa in my life! I even discovered that it has a way of controlling the salty quantity in food. Wow! I found my magic wand; it had no disadvantages, none I have been affected by. I never prepared a meal without a touch of Dawa-Dawa; and like melanin, all the meals I prepared always came out popping. Nobody knew the secret. My love for it increased in geometric progression, to the extent that I not only add...

KITCHEN EXPLORER!

Image
I told myself that I’d have a handful of the knowledge of all the delicacies in Cross River State, because I was born to explore, I like trying new things; I took a break from all the “Banga soup”, “Owho soup”, and “Egusi soup” which I was already used to, from Adam, and promised to try all the strange edibles there is, in the state. And trust me, I did! I’d go to the market having just the name of the soup I was gonna prepare on my mind, but with zero knowledge of its MOP (Method of preparation). But I had a tutor. I met her in the market, and she became my acquaintance. I found out that I could talk to her; I always asked questions about one unfamiliar soup or the other. Her shop was my first stop when I arrive the market. She: Corper, what are you cooking today? Me: I learned there’s one they call “GREEN SOUP”. Abeg, how dem take dey cook am? She: Smiles, “Kopa Kopa! 'Green soup' dey make sense o". Try it. You’ll like it. And that’s how she ends up convi...

MOHAMED

Image
Shopping in the market was an interesting experience and I always looked forward to “Market days” in Ogoja/Bekwarra which came every five days. I had customers; Kindhearted men and women, boys and girls who I bought specific items from. No matter how meager the item was, they were happy to have me around, and that feeling alone kept me faithful to their shop. I was staying alone, so I needn’t much cash to set my soup in shape. Two hundred naira (N200)worth of beef was good to go for a sizable pot of soup or stew; if I wanted to spoil myself a bit, I’d raise it to N300, excluding other side attractions like “Kpomor”, “Crayfish”, “Periwinkle”, “smoked fish”, and “okporoko fish” which must not be lacking in my delicacies. I only had one customer in the market whom I bought beef from, Mohamed. A Muslim; he was a fine and nice guy too, even though other meat sellers got jealous and tried to steal me from him, I remained faithful. He never misses his prayers on a daily basis and ...
